    I like the quick and dirty recipes that happen out of nowhere when you're not even trying! This easy breakfast banana boat is what I ate this morning in a hurry before someone came over. Remember, there's no excuse to not eat a healthy meal in the morning!

    This is so much more exciting, delicious and nutritious than eating a boring old banana on its own. You can also think outside the box, and add any toppings you have laying around your kitchen! I tossed on almond butter, chia seeds, coconut, and some other goodies mentioned in the recipe below. Easy vegan breakfasts are totally in your skill set from now on.

    Ingredients

    • 1 banana
    • 2 tablespoon almond butter
    • 1 tablespoon raw cacao nibs
    • hemp hearts
    • dried cranberries, finely chopped (optional)
    • coconut flakes (optional)
    • chia seeds (optional)

    Instructions

    • Slice the banana in half with the peel on and then you can kind of pop it out of the peel a little by peeling it back slightly. Spread almond butter on each side and top with raw cacao nibs and hemp hearts. Fee free to add other toppings of your choice or some of the options listed. Eat the banana out of the boat with a fork!

      This looks incredible! I also like adding cinnamon, granola, blueberries, raspberries, strawberries and even coffee beans! 🙂
